Ingredients:
150g rice
3 eggs
6 spring onions
60g cooked green peas
40g carrot
30g French beans
2 1/2 tablespoons salad oil
1 1/2 tablespoon soy sauce
Salt and pepper
Method:
Step 1: Cook rice with salt and allow to cool. Chop onions, carrots and French beans finely. Beat 2 of the 3 eggs lightly.
Step 2: Heat oil and fry chopped onion.
Step 3: Add beaten egg and scramble, add vegetables and cook.
Step 4: Add cooked rice, pepper and any other spices; mix thoroughly – followed by soy sauce.
Step 5: Allow it to steam for a minute or so over a low flame.
Step 6: Mix once again.
Step 7: Make a small omelette using the remaining egg, cut into thin strips and delicately place through the fried rice.
